And if he does not identify it, all the sinews are forbidden because each one could be the sciatic nerve; but the broth is forbidden only if the sciatic nerve imparts flavor to the broth.
Chachmei Bavel records that hot permitted food entering hot forbidden food is prohibited, while hot food entering cold food requires peeling off the outer layer and cold food entering cold food requires rinsing; the same distinctions are stated for meat and milk.

Chachmei Bavel recount that Rava bar Ahilai prohibited bread baked in an oven smeared with meat grease, even with salt and permanently thereafter, lest it be eaten with dairy kutach; the passage compares this to the prohibition against kneading dough with milk, which renders all the bread forbidden because of habitual transgression.
The Gemara recounts: There was a certain oven that they smeared with grease from meat, and consequently the flavor of meat was absorbed into it, and then they used it to bake bread. Rava bar Ahilai prohibited eating this bread even with salt, and not just with milk. On the Prohibition of Cooking Permitted Food with Forbidden Food in the Same Oven It is forbidden to roast permitted meat and a forbidden piece or the flesh of an impure animal in the same oven, even if these different pieces do not touch; but if this happens by chance, the prohibition disappears, even when the forbidden meat is fattier than the permitted meat. However, one can use the same oven to roast permitted meat and forbidden meat, but under the following conditions: the oven must have a capacity of 96 liters of flour, its opening must remain open, and the pieces of meat must not touch. This can be done even when the oven is small and its opening closed if one of the vessels containing the meat is covered. GLOSS: The same applies when the two foods are one of meat and the other of milk. However, it is customary to take the prohibition more seriously when done deliberately; but when faced with an accomplished fact, the most lenient opinion is accepted, even if the oven is small. When bread and meat have been baked in the same oven, it is forbidden to eat the bread with milk, if there is other bread available; similarly, if a gentile has baked bread at the same time as a forbidden food in the same oven, it is forbidden to buy this bread if it is possible to obtain other bread, as this would be a deliberate act. But when it is not easy to obtain other bread, the prohibition disappears, as it is considered an accomplished fact. According to some authors, the prohibition must be observed even in the case of an accomplished fact when it involves a food emitting a flavor, unless the oven is open on the side where the smoke exits; however, if the loss resulting from this prohibition would be significant, the case of an accomplished fact can be admitted, even if the oven was closed. If the forbidden food is spiced, as is the permitted food, the flavor is emitted with more force, and the prohibition must not be violated, even in the case of an accomplished fact, provided that the vessels containing the two foods are uncovered; but if one of them was closed with a bit of dough alone, the use of the permitted food is authorized. When two foods, one permitted, the other forbidden, have been cooked or roasted uncovered in the same pan, the first is forbidden, even in the case of an accomplished fact, and if bread and meat were cooked this way, the bread cannot be eaten with milk. There is no need to observe the prohibition if the permitted food and the forbidden food were cooked in the same oven one after the other; however, when the pan has received the evaporation of the two foods, the permitted food is forbidden, even if these foods were cooked one after the other, but uncovered, as the pan is considered a lid. Some authors claim that wherever there is an emission of flavor, one cannot argue the case of an accomplished fact if the permitted food does not represent a quantity sixty times greater than the forbidden food; but if the permitted food has the prescribed quantity, its use is authorized, and everything in the oven can dissolve the forbidden food. This is the accepted opinion in case of loss. According to other authors, the permitted food is forbidden even if it has the prescribed quantity when it concerns, for example, leavened bread on Passover; the oven being small and closed, and the vessels containing the two foods uncovered, the flavor of the forbidden food is emitted and makes observing the prohibition necessary, even in the case of an accomplished fact. According to another opinion, there is no need to make this distinction; but when the loss would be significant, one can follow the most lenient opinion. This only concerns the case where the permitted food and the forbidden food have been roasted in the same oven; but if each food has been cooked in a separate pot, the use of the permitted food is authorized, even if the oven is small, its opening closed, and the two pots uncovered. GLOSS: This only refers to an oven that is slightly open; but when the oven has been hermetically sealed to prevent the cooling of the dishes, as is customary on the Sabbath, the permitted food is forbidden. חילוקי מנהגים אלו נאמרו לגבי כל הכלים, אולם נראה שכיום הם קיימים לגבי כלי חרס ועץ שבולעים טעמים אל תוכם, וכן לגבי כלי מתכת וזכוכית שלא נוקו כפי שמקובל בימינו. אבל בכלי מתכת וזכוכית שנוקו עם סבון כמקובל בימינו, כיוון שידוע שאינם פולטים שום טעם, מסתבר שגם המחמירים יסכימו לדעת המקילים, ולכן בני כל העדות יכולים לנהוג כדעת המקילים, לבשל מאכל פרווה בכלי בשרי נקי כדי לאוכלו עם חלב, וכן להפך. אמנם למדנו (לעיל כה, ח), שככלל יש לשמור על ההפרדה בין מערכות הכלים הבשריים והחלביים, וכאשר מתכוונים לאכול מאכלי פרווה עם בשר נכון לבשלם בסיר בשרי, וכאשר מתכוונים לאוכלם עם חלב נכון לבשלם בסיר חלבי. אולם בשעת הצורך, ואפילו לצורך קל, מותר לבשל תבשיל פרווה בכלי בשרי נקי בן יומו, ממתכת או מזכוכית, כדי לאוכלו עם חלבי או להפך.
The passage states that nearly all rabbis require kashering utensils used for forbidden food or for meat and dairy interchangeably, maintaining the customary separation between meat, dairy, and non-kosher foods even after recognizing that metal utensils do not absorb and release flavors.
מנגד, כמעט כל הרבנים סוברים למעשה, שחובה להכשיר כלי שבישלו בו טרף, וכן חובה להכשיר סיר חלבי שבישלו בו בשר או להפך. שהואיל ונהגו בישראל מדורי דורות להכשיר כלי מתכות בהגעלה או בליבון, חובה להמשיך במנהג המקובל. בנוסף לכך, למדנו שחכמים תקנו תקנות רבות כדי לבצר את ההפרדה שבין בשר לחלב וכדי למנוע את האדם ממכשול. לכן אסרו לאכול בשר וחלב יחד גם כשאינם מבושלים, ואף אסרו לאכול חלב אחר בשר, וכן אסרו לאכול בשר על שולחן שיש עליו חלב או להפך, ואף אסרו לאפות פת חלבית או בשרית שמא יטעו לאוכלה עם המין השני (לעיל כה, ג-ה; כו, א-ב). ניתן לומר שמתחייב מתקנות אלו שלא להשתמש באותם הכלים לבשר וחלב, ולא בכלי טרף למאכלים כשרים, ולהקפיד על כל דיני ההכשרה שחלו על כלי מתכת שפלטו טעמים גם בכלי מתכת שאינם פולטים טעמים. שאם לא יקפידו על כך, יש חשש שיבשלו בכלי טרף שאינם נקיים מאכלים כשרים, ויבואו לבשל בכלי בשר שאינם נקיים חלב או להפך ויעברו על איסור בשר בחלב. לסיכום: דעת רובם המכריע של הרבנים, שגם לאחר שהתברר שכלי מתכת אינם בולעים ופולטים טעמים, חובת הכשרתם נשארה במקומה, הן מצד חשיבות שמירת המסורת, והן מצד היסוד שלמדנו מכל תקנות חכמים, שצריך לבצר את ההפרדה בין בשר וחלב ובין טרף לכשר כדי למנוע מכשול.
Rav Yitzchak Yosef states that meat and dairy utensils should not be kashered simultaneously unless one is not ben yomo; if both are ben yomo, they should be kashered one after the other.

The passage states that contemporary ovens may absorb vapor from food, so bread baked simultaneously with milk-based bread is considered dairy and may not be eaten with meat; when baking consecutively without visible milk-dough drips on the oven walls, regular bread may be eaten with meat, though obtaining it from a second baking cycle is preferable.
באפייה בתנורים של זמננו כתבו הרבה אחרונים, שמלבד בעיית "ריחא", יש להניח בסתמא, שיש גם "זיעה" העולה מהמאכל. ונבלעת, בין בתנור ובין במאכלים האחרים הנאפים עמו. לפי זה: הלחם הנאפה — בו בזמן, בתנור אחד עם לחם הנילוש בחלב — נדון כחלבי מפאת ה"זיעה", כאמור, ואין לאוכלו עם בשר. אם נעשית האפייה בזה אחר זה תוך הקפדה שאין נטפים של עיסת החלב בעין, על דפנות התנור — ניתן לאכול הלחם הרגיל עם בשר. ורצוי, במידת האפשר, להקפיד על קניית הלחם מ"תנור שני". קרי, ממחזור שני של אפיית הלחם הרגיל, שאחר אפיית הלחם החלבי.
